Payments: Authorize or Capture?

My current shopping cart (which is going out of business in a few weeks) has a mode: Authorize and Capture.
OC only allows one or the other.
What's the difference between the two?

I only have two categories (Ford and GM) for the products I sell so I used the default slide show in the middle of the webpage and replaced the two default images with my two images. It's so different to the OpenCart default home page that it sounds to me like you should just create your own new page that is not part of OC and then have the OC stores running in sub folders.
