I'm not sure I fully understand this request. While I do understand regarding the changing value of quantity to set an out of stock product isn't really reassuring, isn't there already a stock / not in stock drop-down option from the admin - > catalog - > products page ? (v1.5.2.1)

Since the 'name' field is unique, there isn't really a need for adding an alias name. Simply by replacing: SELECT cd.`name` AS name with: SELECT cd.`name` should suffice and, yes, you must keep the $query->rows in the model since you're looping in the template with the $category variable.
