You probably mean the payment instructions, right? Because usually, below the final step of checkout payment information is displayed. Look for it in language files, catalog/language/your-language/payment folder.

PHP is an open code. The only way to protect it is to use encoding software like Ioncube. But I would never ever, ever, ever recommend you to use them. This is the most stupid thing you can do with your extension. Any other ways to check for license or domain are just a fool proof. Every newbie code...

Since you want to limit it to a period of a year, why not sell a single product with subscription only for a specific customer group and this CG has a store credit of say 1000$ which they can use to buy all they like. Downloads will work as usual. You need to put all order statuses to 'not-complete...

Threre was an extension for creating combo purchases, but you have to create a combos manually. It was back in the day, when OC 2 wasn't released yet and extension was pretty clunky. Try to search for "combo" on OpenCart market.

But in my opinion, OpenCart itself isn't very good for selling files.
