If you don't want to upgrade your software, you need to find a web hosting provider that offers CloudLinux OS. CloudLinux includes hardened versions of 'outdated' PHP versions. We use it on our servers and have support for PHP 5.x and newer.

CloudLinux hosting is the way to go as mentioned earlier. Much more secure than many web hosting providers standard offerings.

Open your index.php file and it should tell you the version you are using. If it looks wrong, maybe you didn't upload all of the new files properly?
PHP Version and MySQL version (5.7) are 2 different things.
