Thanks for all your help. What solved it for me was, I think, going to customers > customer groups > edit and simply saving the group. I didn't need to make any changes, simply save and this must have populated the database with some missing fields. What's important is that it's working now.

I switched to the default theme, reset the registration twig file and disabled the modifications yet still the custom fields are hidden :choke: It works fine for OpenCart 3.0.3.8, hence it's not an OpenCart bug.
