What is the size of your shop? Do you have your own server? If the answers are, huge and multi-core and loads of ram go with magnento. Edit the template files :)

You can basically just delete the html for showing the cart buttons and such.
You should also consider removing most of the html for all the rest of the "cart functions".
Basically you'll end up with a specialized template.

I don't think that this idea is about layout but rather how the database is actually setup (not sure if this is the right word). [setup? designed? Basically trying to find the word that describes how you actually decide what database type and if use indexes, and/or foreign keys.] Something like this...
