Category images(category wall) Extension

Hi all,
Firstly I'd like to wish everyone has a Happy New Year!
I am currently building a website but have little experience.
I know some basics but I am having difficulty with the extension with thumbnails of categories on my home page.
I dont know where I can alter how many categories per line i have in a grid view (currently I have 3 on the top row and then a row of 4 then one on its own and i want two rows of 4)
I also cant seem to change the text to centre on the heading or on in the category boxes.
My website is www.yourmotorcyclestore.co.uk and I want it to look similar to www.sportsbikeshop.co.uk in regards to the category grid/wall/thumbnails.
