Here is the link to my website so you can have a look at the logo and how small it is, note when you click view actual image the larger size of the logo appears but in this case it shrinks when I upload the logo as my store logo.

Well, looks like you need to change the CSS of the theme to increase the store logo. I know that's the problem but the question now is which css file exactly do I change and what attribute?
I review your website, you are using journal theme.
I checked in source code its adding size statically in logo tag.
Either it can be done by apply important css or it can be done from files of template.
If you are non technical you can hire some developer for this its a very small task.

It is not that. Instead of changing the CSS of the core files, make the modifications to the CSS files of the Journal Theme. Well, for some, it's obviously hard to understand, that Issues, related to Custom OC Themes
and/or Extensions, have nothing to do with OpenCart, and this forum is not a place to 'handle'
commercially offered Extensions and Themes, as long as they have and get their own Support.
But some will probably just not be able to use the 'official' Seller Support, without
beeing registered Buyer of such a Theme / Extension. And such can make it hard
to then find a helping hand, just for the plain fun of it, and with sure nothing in return in sight.

But it's nothing personal, and no offense, it's just the 'only' way it works, on longer 'terms' at least ...
And just one explanation attempt, why one possibly repeatedly 'ignores' the advise, to use the
Seller-channel....
