Adding fee to "Pickup from store" and disabling UPS on item.

My version is 1.5.1

In my store I have some items that cannot be shipped but can be picked up at the store. How do I remove the UPS / USPS options on these item so you can only select "Pickup at store"?
Also, My prices differ from internet to retail. How do I add a fee to pickup at store on the items that are shippable?
