How much can be removed from the checkout process

Hi all

I am currently using the Hide Checkout Steps extension to remove most of the checkout process for a website that we are using internally so staff can order products, we are looking to simplify this even further to achieve the following
Simple registration, just a user signs up so we have their name, email address and phone number
Choose from a pre-defined set of delivery locations

Can this be done?

This is quite custom so you should probably find a developer such as ourselves or one of the many who will reply if you post this in the Commercial Support forum.
