I installed the downloaded software onto the webserver hosting my site, and setup went just fine. It did have some errors setting up the shop at first so I double checked the information and then submitted again and it worked. I was able to login fine into the admin portal and everything looks good.
However, whenever I go to the actual shop, it gives me a 500 Internal Server error. There is no real explanation as to why, even when I check the raw server files, the answer isn't really conclusive. Any help would be appreciated.
Also... is there a certain version of PHP that we need to be running on our server to use this software?

PHP 5.4 is the minimum for 3.0.2.0. So should work fine on 5.6 or 7+. Do you see anything in the error logs in storage/logs or in your PHP error_log?

Use <?php phpinfo(); ?> to see if the PHP error log is switched on and the location.
I did that and it did show me that the logs were turned on. I looked at the error logs but it didn't show anything related to the Shop location or anything specific to it. Should I just delete the shop and load from scratch?
If you do not have any data you want to keep, deleting and reinstalling may solve your issue.

By removing the php.ini file , it may conflict the server config , remove it and it will be intialized auto again !
So I deleted the php.ini file from the main folder where open cart was installed and that got rid of the 500 error! So thank you for your help.
But.... I'm wondering if I need that file and getting rid of it may only be a temporary solution... What do you think?
It depends on the server's PHP setup. You could look an the php.ini and compare the setting to the results of <?php phpinfo(); ?>. You could also comment out each line of the php.ini and put the back one by one to find out which line causes the problem.
There are two config files. One on root and another under admin folder. Please check config.php file on root folder. Also check your .htaccess file.

You need to check you server / PHP error logs to find out what the error is.

OC version - theme - any checkout modules installed ?
New installation, working fine before installing one page checkout?
