I have seen in some articles about SEO that <h1> tag is important because of SEO keywords. I have checked my site and <h1> tag is present but always include the shop logo with no text on all pages.
I would like to have <h1> tag include the category name or product name (if product is displayed).
Do you know some extension which does this or maybe a small code change in twig file(s)?

Yes that's good advice, roughly in terms of importance for SEO:
URL keywords
Title tag keywords
H1 keywords
H2 keywords
etc.

Unfortunately it creates <h1> tag on product pages and category pages like this:

So you could change the <h1> to <div class="h1"> and then in the CS change h1 to .h1 in the appropriate place.
Then add the <h1> around the product name.
If that makes no sense, consider posting on Commercial Support for paid help.

The above answer from Paul should work with few tweaks:
Just change the <h1> to <div class="logo"> and on the product's title change the <h2> tag to <h1>.
Also change the <h2> tag to categories, to <h1>.

It was previously done using the logo but when the logo has <h1> tag then all pages have this tag.
