I am still seeing your default modified theme rather than the original default theme.

I just tried it, it worked but have to keep refreshing, it says must choose shipping option even though it was chosen, cleared cache again, then it worked. Still have to refresh everything to see it.

The theme folder should not be modified. Only the custom theme inside the theme folder should be modified. Opencart originally delivers the default folder name. This folder should not be modified. Instead, use a custom name but leave the default folder as is.

Theme1 should be placed inside the theme folder?
Where the pink circle is?

- catalog/view/theme/default
- catalog/view/theme/your_custom_theme

where your_custom_theme is the name of your customized custom theme name.

If theme1 contains the same sub-folders as the default theme, then yes, it is the proper way to do it.

Yes, its the same except for the colour changes in the stylesheet but still have to keep refreshing and new image uploads still dont show unless I log out and then login.

From the admin, ensure to have selected the: default theme and ensure that the re-uploaded default theme to your server is the one being called: default as opposed to your custom theme folder. Then, clear all caches - browsers and both caches from the admin dashboard. Then, try again.

Only the default theme shows in the drop down in admin, no theme1 shows. So obviously its not being called. Unless I was suppose to do something else?

Theme - Default Store Theme
Default Layout - Default
