Please could someone point me in the right direction for editing the standard text in the emails sent to customers. For example in the order confirmation email it currently says "Thank you for your interest in XXXXXX products. Your order has been received and will be processed once payment has been confirmed.", where do I go to change this?

I have already looked in catalog>language>en-gb>mail and catalog>controller>mail
