OC Version 3.0.3.1 problem with updating products data

Hello,

First of all thank you for taking the time to read this.

I have the following problem with saving products data such as prices, sub cat using the autopolulate categories. While it saves and gets displayed in the home page, all products data disappears after a while and i get a blank home page. Kindly note that the products are still showing in their categories though their additional data does not get updated.

I have tried using OC 3.0 up to 3.0.3.0.1 versions, have checked the htaceess, config.php files along with switching between php 5+ and 7 versions, storage folder is out of the home directory, even created 2 different databases and installed twice test servers with OC 3.0.3.0.1 while still having the same issue.

Any idea anybody of what can cause it?

hmmm.. okay, this is definitely a weird bug so let me rephrase it cause i'm badly need of a solution.

Assuming one has come across this problem with any OC version, what could cause such thing? which files should be looked for?
..and finally, what is the most stable version of OC?
