After hours of mental agony and abuse, I have discovered that if a customer places an order prior to setting your correct default currency, the prices of all products will be adjusted to that initial default currency on your website.
To fix this you will need to delete the initial orders (print or write them down first), then delete the original default currency if you don't want it or keep it but be sure to set your correct currency as default.
I hope this saves someone from the issue I have endured.

Which version of Opencart are you using? If using a custom theme for the store-front end, switch back to the default theme and see if the issue persists.
