Options Across Products

In my Opencart Store, I have a large number of products that all have the same options (choice of leather colour). At the moment I add this option to each product.

Is it possible to have some sort of global option, so if an option is chosen in one product, then the number is reduced across all other products? This would make stock control so much easier

Thanks for the suggestions, but that isn't really what I'm after. As the same option is available across arange of my products, I want to reduce the stock level across the whole range.
