- Put your site under maintenance
- Make a full backup of the store and its database before applying any upgrades
- Uninstall all installed extensions, including themes, on the store - no exceptions
- Ensure each extensions, including themes, are compatible with the next version of OC
- Upload all new files on a separate folder of the store in the live server and import the live database in that separate folder
- Remove the live folder and rename the separate folder back to the live running folder of the store. Ensure to keep both config.php and admin/config.php files
- On the browser, run the upgrade
- Once the upgrade completed, remove site maintenance

You really don't need this. There's nothing super important or really interesting in OC 2.3 besides new folder structure and a few crucial bugs, which you may encounter or may not. If your site works properly on 2.1, I'd recommend you to leave it as is.

Bug fixes have also been added on more recent version v2.x releases. v2.3.0.2 being the latest release, I am sure you will find the platform more stable than its prior releases.

thanks to both of you guys... i think its important to have as much information as possible to make an informed decision.
I will do the upgrade next week probably if for no other reason than it is important to me to document and test a process: its educational and will help me in future.

I would recommend running the upgrade on a test server. That way, if something goes wrong, you can just delete and try again. I would never, ever, upgrade on a live server.
