First post here, so hopefully I'll get some attention to the support I need
So my friend has a OpenCart 2.0 website, using the PayPal gateway for payments. All of the status have been setup correctly and should have no problem.
When a customer placed a order the status automatically went to "Canceled" which is a bit weird. The next bit is even weirder, when you go and change the order status to something like "Pending" it ignores your request and simply adds another "Canceled" to the list. See Screenshot.

How can I fix this?

are you using a fraud prevention system? That may likely be the issue.
Is the customer IP address in the blacklist?
Did you check settings under the checkout > order status default setting on the options tab? Make sure its not set to canceled.
Running Opencart v3.0.3.2 with multi-stores and the default template from https://www.labeshops.com which has links to all my stores.
