Can I ask please? Is there a limit to the number of options for a product? I have 24 options for one product and only 20 are showing.
How do I show the missing 4 please? Is there a setting I am missing?

in the following file:

public_html/admin/php.ini

Adjust (or add the line if it's not there already) max_input_vars to a higher value. You may need to work with your hosting company to determine how high of a value you can set. This is responsible for the number of options that can be saved.

Do you mean public_html/shop/admin?
There is no admin folder in public_html
If you mean the admin folder in the shop directory the only php.ini file is called xphp.ini
If you could explain further I would be grateful.

Your site appears to be installed in the subfolder /shop/ so yes, you would edit public_html/shop/admin/php.ini

Since it is called xphp.ini, you will want to rename it to php.ini and make sure it has the original contents provided by Opencart and then you can adjust max_input_vars
