I'm trying to find an extension that will display products inside categories / subcategories, whenever I hover on the category in the dropdown menu- exactly the same as on this site: http://www.visiondirect.co.uk/

Go to the Contact Lenses menu and if you hover on any of the brands the products pop up, along with images, on hover for each brand.

I can't seem to find any extension that will do this in OpenCart, but can someone advise. Really need to get this set up. Thanks.

This is a default OpenCart behavior, you don't need any extension.

Er, no I'm afraid it isn't. Categories are added to the submenu automatically but I need products within that category to show when that category is hovered on within that menu- along with thumbnails for those products. Exactly as per the sample website.

Ah, you mean products displaying in submenu, I see... In terms of UI it's extremely bad decision, which will fail on mobile devices or simply won't be available at all.
