Ability to modify an order, such as the total, or to reduce the price on an item for a customer. Or cancel / delete and order. and still have the order correctly be reflected on stock and statistics after the edit. This is greatly needed because at the End of the Year tax time, if your orders are not correct, you are going to have a nightmare on your hands!!
This is in 1.4.8 and will be better in 1.4.9.

Sometimes you get orders by phone or by mail (via check, money order, etc), it would be awesome if I could go into the admin system and manually create an order, and mark it as paid. That way I can still use OpenCart to keep track of my stock, and sales, without having to keep additional paper records of mail-in and phone orders! That would be awesome!
