is there an option or setting to turn off the sales. I want to use opencart like a catalog, not like an online store.

There are several catalog only extensions in the extensions store - do a search.
Running Opencart v3.0.3.2 with multi-stores and the default template from https://www.labeshops.com which has links to all my stores.
