I use OC3 and my current setup is
IF a buyer is spending less than £20 gbp
They can choose from chargeable Standard delivery, Next Day Delivery, 1st Class Signed for etc
IF a buyer is spending more than £20 gbp they get the options above + a free standard delivery option
All of that is OK, but I am trying to give users a voucher so that on a certain category they can get free del regardless of min spend, but of course I want this to be free STANDARD delivery - for some reason someone has been able to put an order through with free royal mail special delivery. Any way to stop that? I was thinking maybe make the discount -£1.79 which is the minimal non-free delivery I would charge? but then if they spent over £20 they could probably apply that against the free delivery and I'd be paying them for delivery Lol.
Any ideas of the best way of doing this?

A "free shipping" coupon in OpenCart gives a 100% discount to the shipping cost the customer chooses, no matter what cost that is. Thus, someone can choose your most expensive shipping option, and it will still give them free shipping by adjusting the discount.
If you want to address that, you'd need to hire someone to modify the Coupon system for you, or purchase an extension that can do this. If you want to hire someone to modify the Coupon system, and you need to find a developer, you should post a request in the OpenCart "Commercial Support" forum, which is checked by a number of OpenCart developers. You can also try checking out the OpenCart "Partners" area.
If you want an extension, you could use Ultimate Shipping to do this. You'd need to set up all your shipping rates within it (though it can request from other shipping methods, so you can keep all your current rates). Then, you'd add a rule like this to the shipping options that don't qualify for the coupon:
Rule: Coupon is not FREESHIP
The only caveat to that is that the customer would need to make sure they enter their coupon *before* checkout, otherwise the shipping options will not be restricted. OpenCart does require the coupon to be entered on the cart page by default, so it shouldn't be an issue unless you're using a custom checkout, or have a coupon box that comes *after* the shipping method choices.
