If you're using it for a category override, you don't need to enter any route in the Layout. Just create it, and assign the modules to it. That way it won't control any actual pages, and will only control the categories/products that you assign it to.

Actually, it's not a wise decision and a bit illogical. Total is basically a sum of ALL order totals, including coupon. I'd recommend you to change the sort order of Coupon order total and set it right before Total. Your coupon will be applied exactly as you want and Total amount will be calculated...

If you're using a recent OpenCart version, I believe it hides any areas where the user doesn't have access/modify permissions, so just remove the permissions to the "marketplace" areas in Users > User Groups. That should hide them for the appropriate user groups.
