No, changing your theme should only change the display of your site on the front-end. It won't change any of the product/category/etc. data in the database. Of course, make sure you make a backup of your site and database before changing, just in case your new theme does something crazy or something...

No, no one monitors the marketplace. There's also no "Report" button any more, so you have to contact OpenCart support in order to report a fake extension. Turn off error display in System > Settings > Server. You can leave error logging turned on, but the display should always be turned off for a live store.

If that doesn't fix it, talk to your host about how to hide those error messages, and not output them to the web page.

ocMod files are installed directly into the database, so they're not stored on the server. If you want to edit one of them, you need to either do it in the database (in the "modification" table) or edit the install.xml file, delete the old one in Extensions > Modifications, then upload the new file....
