Based on the value of the tax, it looks like it's only taxing the shipping cost. That would mean you applied a Tax Class to the shipping method, but you did NOT apply a Tax Class to the product itself. Double-check that all your products have the right Tax Class assigned. That should solve your issue.

Sounds like you disabled the "Shipping" Order Total, which controls the display of that line item. You can re-enable it in Extensions > Order Totals > Shipping.
